Lentil Chili
Ingredients:
- 1 Can of Brown Lentils
- 1 tbsp Vegetable Oil
- 1 Medium Yellow Onion, diced
- 1 Jalapeno, diced
- 1 Red Bell Pepper, Chopped
- 1 Can of Crushed Tomatoes
- 1 Can of Kidney Beans
- 1 Can of Black Beans
- ½ Cup of Vegetable Broth
- 1 tsp Garlic Powder
- 1/2 Tsp Cumin
- 2 tsp chili powder
- 2 tsp paprika
- Salt and Pepper to taste
Instructions:
- Heat oil over medium heat and add in diced onions. Saute until fragrant.
- Add vegetable broth, bell peppers, jalapeno, tomatoes, and lentils.
- Bring mixture to a simmer and add cumin, chili powder, paprika, salt, and pepper. Stir until combined
- Let simmer for about 10-15 minutes.
- Serve and let cool for 5 minutes before enjoying!
Variations:
- Add a dollop of sour cream, other types of beans, different veggies, etc.
- Serve with cornbread for a classic "homestyle" dinner!
- Different colors of lentils can also give you a variety of nutrients and make interesting colors for your chili!
