Chickpea Curry

Ingredients:
- 1 can chickpeas (drained)
- 1/2 white onion (diced)
- 1 garlic clove (minced)
- 1 tbsp of curry powder
- 1 tbsp vegetable oil
- 1/2 tsp cumin
- 1/2 can dice tomatoes (6 oz)
- 1/2 can coconut milk (7 oz)
- salt and pepper to taste
- chopped fresh cilantro and lime wedge
- 1 cup of white rice
Instructions:
- In a large bottom pan, combine oil, garlic, and onions into pan
on medium-low heat until they become fragrant.
- Increase the heat to medium and add curry powder and cumin.
add in tomato and continuously stir in order to avoid burning on the bottom.
- Pour in the coconut milk slowly and stir occasionally. Add in chickpeas and bring to a simmer for 10 minutes.
- Garnish with lime, cilantro, and serve over rice. Enjoy!

Variations:
- Add more or less lime and cilantro for an interesting citrus flavor.
- Experiment with green curry paste as well in this recipe instead of red curry powder.
